In April 2026, in Grand Mercure Ise-shima Resort & Spa,
Betsutei Mataya, a new food base where you can experience the blessings and food culture of this land, is born.

The blessings of the sea in Matoya-wan Bay, the culture technology that has been passed down, and the thoughts of producers.
By expressing them as dishes and delivering them in the most delicious state, we will provide food experiences unique to Ise-Shima.
It was born as a new initiative to link tourism with the primary industry in the region by cooperating hotels and producers.

Ise-Shima from a place of worship to a place of stay-type gastronomy.
We will deliver a special moment that you can only meet here with that feeling in shape.

Concept

Put the fire in, fresh.

"Betsutei Mataya" was born as a new food base where you can experience the nature and food culture of Ise-Shima.

This area, embraced by Ise-Shima National Park, has ingredients grown by rich seas and forests, and a food culture that has been passed down for a long time.
We aim to provide the taste unique to this area in the most delicious state by incorporating the blessings of those regions and the thoughts of producers in cooking.

In addition to the traditional values of "fresh = raw", we offer courses centered on charcoal-fired dishes based on the idea of bringing out the true value of ingredients by burning fire.

Live food experience with five senses

The aim of "Betsutei Mataya" is to experience the nature and food culture of Ise-Shima.
We will deliver the unique taste of this land by incorporating the blessings of the region and the thoughts of the producers in cooking.

At Betsutei Matoya, you can experience not only cooking but also the story behind it.

Producers themselves talk about the ingredients, the sound and aroma that are baked on charcoal fire, and a dish that is completed in front of them.

By connecting ingredients, producers, and cooks, we will provide you with time to feel the nature and culture of Ise-Shima with your five senses.

About Sato Farm

Philosophy that lasts 100 years and the cycle to the future

Founded in 1925, Sato Farm in Matoya-wan Bay, Shima City. Matoya oysters grown by 100 years of skill.
Based on the philosophy of "quality rather than quantity," we are making oysters with the highest priority on quality.
We also work on recycling local resources, such as the reuse of oyster shells, and practice sustainable aquaculture.
This initiative leads to the future of Ise-Shima.

As the only producer with fishing rights in Matoya-wan Bay, we continue to grow high-quality oysters through aquaculture technology cultivated over many years and thorough quality control.

Our sincere attitude toward the material supports the value of this dish.

The blessings of Ise-Shima for each dish

Betsutei Matoya offers kaiseki cuisine that maximizes its appeal, focusing on ingredients grown in Ise-Shima.
From appetizers to desserts, dishes reflect the local food culture and seasonality, and you can enjoy different tastes and backgrounds for each dish.

We use ingredients that represent Mie Prefecture, such as Matoya oysters, Ise shrimp and Iga beef, and finish them with a suitable cooking method.
In addition, cooking is designed not only as a taste, but also as an “experience” that includes the process of baking with charcoal fire, aroma, sound, etc.

Japanese preparation, wrapped in the aftermath of food

The space that incorporates Japanese-like settings such as tatami mats and shoji makes you feel the tranquility that is separated from the outside world, enriching the time to face cooking.
It can be used not only as a meal with family and loved ones, but also as a space suitable for gatherings on special days.
